Are you looking for an easy one-pot dinner? I’ve got you covered.
Cornbread and chili are a classic food combo. For this recipe I decided to combine everything in one dish. It’s a delicious combination and saves on dishes which is always a bonus.
First, for the chili I created a super easy chili recipe that cooks pretty quickly. I really wanted this dish to be an easy meal that you can make on a busy weeknight. Of course you can substitute with your favorite chili recipe if you’d like.
Next, I opted to use a store-bought cornbread mix. I used the Jiffy mix because I can find it on sale for 2 for $1. That’s a deal that I just can’t pass up. Of course you can also use your favorite cornbread mix or even make your own for this dish. Use whatever you have on hand. I like to consider recipes a guideline. When trying to save money you should use what you have on hand and make each recipe your own.
Gotta love cast iron
To cook this chili cornbread skillet I chose to use a 12 inch cast iron skillet. I love that cast iron easily goes from stovetop to oven. This is the only pan I used to make this recipe. Some of my favorite meals to make are one-pot meals. I’m a big fan of recipes that use as little dishes as possible.
If you don’t have a cast iron skillet you can use any pan that is oven safe. If you don’t have an oven safe pan you can cook the chili on the stove, transfer it to an oven safe baking dish, top it with the cornbread mix and bake it.
This recipe is very simple. As I mentioned before it’s great for a weeknight. This recipe can be amped up by adding some veggies. Use whatever you have in your fridge and make this a complete meal.

I chose to top this skillet with some sour cream, green onion & avocado. Feel free to add your favorite toppings or eat it as is. It’s delicious either way!
Ingredients for Chili
One can drained kidney beans (about 15oz)
Ground beef (1 pound)
1 tbs oil
10oz can diced tomatoes with green chilies
1.5 tbs chili powder
1 tbs cumin
2 tsp onion powder
1 ½ tbs garlic powder
Salt & pepper to taste
Ingredients for Cornbread
1 box Jiffy cornbread mix
1/3 cup milk
½ cup shredded cheese
chopped green onion for garnish
Preheat oven to 400 degrees
Preheat oven safe skillet over medium heat with 1 tbs oil
Add ground beef and cook until no longer pink
Drian excess grease and return the ground beef to the skillet
Add onion and cook until soft
Sprinkle in chili powder, onion powder, garlic powder, cumin, salt & pepper
Pour in diced tomatoes, juice and all
Add drained kidney beans
Mix well and cook for about 10 minutes
While chili cooks prepare cornbread mix according to package directions
Allow cornbread mix to sit for about 4 minutes for best results
Turn off the heat and mix chili one more time
Slowly pour cornbread mix over the chili and spread out into an even layer
Sprinkle cheese and green onion over the top of the cornbread mix
Place in the oven and bake according to cornbread package directions which is about 17 minutes for a 12 inch skillet
Remove chili cornbread skillet once fully cooked and allow it to sit for 5 minutes before slicing into it
Slice and serve the same as you would a pie. Add your favorite toppings and Enjoy!
