Here’s a quick meal idea that is perfect for emptying the veggie drawer. It’s super versatile and can be very inexpensive. You can make it with any protein or keep it vegetarian. Here is how I make this meal:
Once the chicken is cooked I remove it from the pan, add some oil and toss in my veggies.
I continue to cook veggies until they are almost soft.
When the veggies are almost cooked I add my stir fry sauce and some chili garlic sauce.
While the veggies are cooking I will start cooking my starch component. I typically serve this meal with noodles but I have served it over rice and either works well. You can also eat it as-is for a lower carb option.
Once everything is cooked I will add the chicken and noodles into the pan so everything can get coated in sauce.
There you have it. A simple and easy meal idea that makes a ton of leftovers- if you add an entire head of cabbage, an entire head of broccoli and the whole packet of noodles like I did. I love this meal because there are so many variations. Use any protein you’d like. Bulk up this meal with any veggies you have on hand and add noodles or rice to make it a complete meal.
-You can use any bottled stir fry sauce or make your own
-Ramen noodles work great for this recipe
-Mushrooms, bell peppers, peanuts, bean sprouts, garlic, fried noodles or wontons and celery are all great add-ins if you have them on hand
-You can cut the veggies ahead of time and store them in an airtight container in the fridge.
