Do you need an idea for brown bananas? This is one of my absolute favorites. These are delicious! The base of the cookie is mashed banana and oats and the best part is that you can add your favorite baking ingredients to customize these cookies.
Here is what you need:
1 large brown banana
1/2 cup of oats
That’s it! Well, that’s the base of the cookie. You can get creative from here. This is what I used in today’s batch.
In a bowl, mash banana with a fork
Add in oats and all of your “extras.” I chose to add peanut butter, chocolate chips, coconut flakes & chopped walnuts
Mix all the ingredients together, it will be a very wet “dough”
Spoon dough onto a cookie sheet and bake at 350 degrees for about 12 minutes

These are a very soft cookie. I like to let mine bake for an extra 2 minutes, just so they firm up a bit more. After they bake I let them sit on the cookie sheet for about 5 minutes and then transfer them to a cooling rack for another 5 minutes.

You can also find one at the dollar store. The quality is not as good but they work just fine.

I have seen these all over Pinterest, just search banana cookies and you will find a ton of different recipes. To make these I just took the base of the recipe and added my own twist. -chopped nuts, any flavor chocolate chip, vanilla extract, cinnamon, raisins, M&Ms, any flavor nut butter and sprinkles can all be great additions
-nuts, coconut flakes and other baking items can get expensive. The best prices in my area are at Aldi or in the Winco bulk section. Be sure to shop around for the best prices and buy on sale when you can
-to store these I put them in an airtight container and leave it on my counter. They don’t usually last more than a few days in my house
-this can be a great breakfast cookie if you leave out the sweet ingredients and just add nuts and/or peanut butter
